Still on track!! Baked Wonton Ravioli...SO GOOD!!

So I am going to give a real quick update:

Weight: 181, so I have only been able to keep 5 lbs off but I am positive about that and think its awesome that I have been able to at least lose that!! Slow and steady wins the race right?!
Workouts: I have been steadily walking for 20 minutes on the treadmill, 1 mile a day (jogging for about a minute each time, a little more and little less depending how I feel)...One day I hope to be able to run the whole mile, soon grasshopper!  Ive also been using the stationary bike or the elliptical, depending how hard I want to work that day...
So all in all, I have hit the gym for at least 3o minutes a day!! Much better than I was about a month ago, so no complaints just yet!  Will be spicing things up over the summer since I will be gone alot so I need to find some good, small stretching and vacation workouts to do while we are on the road...again!

I have a plan, to make a grocery list that actually consists of meals that will ACTUALLY get cooked this week!!! So I will be spending some time on Pinterest looking for new recipes for you guys! Plan is to incorporate the basic ingredients in the meals so not much is needed on the list.  If all goes well, I will be loading the info on the blog with recipes and pics for you!  It seems that people are responding well to the recipes so I will definitely be trying more out for you and blogging about them!!! 

I knew my workout updates would be boring, as they have become for me as well, so I plan on updating on my workouts just once a week and trying to blog more about what we eat!  Hopefully this will keep us eating at home more since we have been eating out WAY TOO MUCH!!!!  Its strange how when Manuel doesn't work, we eat out, which is pretty silly since we are not making any money! HELLO....Anyways, this week will be spent at home being the homemaker that I used to be (except tomorrow because Catherine graduates Kindergarten and we will be celebrating!).

Now onto recipe!!

Baked Wonton Ravioli


Ingredients:
Wonton wrappers or Egg roll wrappers
Pasta sauce
 (I use Ragu, just because its cheap and they have an organic option that has just veggies and no preservatives)
Ground turkey
Onion, chopped
Bell pepper, chopped
Garlic, minced
Baby spinach, chopped
Mozzarella cheese, shredded
Parmesan cheese, shredded
Pam cooking spray

Preheat oven to 400 degrees, spray baking sheet with cooking spray.  Brown turkey meat with onions and bell peppers.  Drain fat, if any.  Add pasta sauce and simmer for about 20 minutes.  Lay wontons on a flat work surface and place 1 tsp pasta sauce mixture in top corner of the wonton/eggroll wrapper. (1tbsp for eggroll wrappers since they can hold more) Sprinkle with both cheeses and a small bunch of spinach (whatever is enough to make the wrappers still close!).  With water, wet the outer edge of the wrappers and fold over to close.  Lay on baking sheet and spray the wrappers with cooking spray, this will help them crisp up in the oven.  Bake for about 20 minutes or until the desired crispness is achieved!  Let cool for about 5 minutes and enjoy!!!

So good and still portable enough to eat on the go!! A whole meal in a wonton wrapper...AGAIN!

Day...I dunno what day!! Fiesta Cobb Salad Recipe :)

So I have no clue what DAY I am on so from now on it will just be....another day...LOL

Anyways, I missed yesterday posting (again, I am getting really lazy about this posting stuff) but I did make it to the gym!

Weight: 179! Yea baby!!
TM- 15 minutes, .75 mile, 50 calories
SB-10 minutes, 1.75 miles, 65 calories

I ended up hanging with my friend, Shayna, yesterday and didn't get much done around the house...but did get Daphne's birthday party planned so WOOHOO!

Today was not gym day so I did laundry!! Yay, that's like 75 calories at least burned...right?
I thought I would share a recipe I came up with for my nephew, Carter's Cinco de Mayo birthday party....


Fiesta Cobb Salad Recipe
Ingredients:
Romaine lettuce (rough chopped)
Spring mix salad, (whatever you like really)
Canned corn (drained)
Canned black beans (rinsed)
Queso Fresco (roughly crumbled)
English Cucumber (sliced)
Cherry tomatoes (halved)
Red onion (diced)
Cilantro (minced)
Avocado (diced)

Prepare as listed above and layer on top of salad mixture!

Honey Lime Dressing
Ingredients:
1/4 cup olive oil (any oil will work)
2 tbsp Honey
1/4 cup Lime juice
1 tbsp cilantro, minced
1 clove garlic, minced
pinch of salt
1 jalapeno, minced (take ribs out for less spice)

Mix all together until emulsion is formed...I put in Tupperware and shook it up to mix it. 

Seriously, the best salad I have ever made!! Hands down...Enjoy guys!

Days 19-20...7lbs DOWN!!

(I thought this post was posted on Tuesday, but my computer died right as it was posting so I guess it didnt, oops)

Day 19:
Weight- 179...Um excited doesn't begin to express my excitement!
Treadmill- 20 minutes, 1 mile, 96 calories
SB- 8 minutes, 1.2 miles, 75 calories

Made it to the gym, enough said!!! Grocery shopping was a success!  $65 for a weeks worth of grub...NOT bad!!

Hopefully, I can get some new recipes tried out this week and onto you to try as well!  I have in mind a few things, such as....wonton lasagna cups, stir fry and MEATLOAF CUPCAKES!! Yes you read that right....I am excited about those!

Day 20:
Weight- 179...STILL HAPPY BOUT THAT!!
Treadmill- 20 minutes, 1 mile, 93 calories
SB- 10 minutes, 1.5 miles, 85 calories

Just a quick note...McDonald's has a great Blueberry, Banana, Walnut Oatmeal...So good and 290 calories! Worth it!!

Day 17-18!!! What is wrong with me?! 7 Days of the Cabbage Soup Diet!!

Day 17:
Weight: 181 lbs!
Laundry!!!

So I didn't make it to the gym yesterday!  I know, I am horrible!!!  I did actually make it to the Y just not to workout, I signed the girls up finally for their swim lessons!! Yay for that...

Thursdays are crazy busy so I have noticed a pattern... I don't make it to the gym on those days!! So I have decided that this will be a main OFF day for us....It wont kill me to only go 4 days a week as long as I go!!!

Day 18:
Weight: 181 and holding!!
I felt horrible so again I didn't make it to the gym!!!

In my defense, I am on this "Cabbage Soup Diet" that is horribly draining from the lack of carbs and sugars!!  Before you say what a horrible person I am for trying this "diet" and how unhealthy diets are...hear me out...

Its only for 7 days!  You eat NOTHING but HEALTHY FOODS and its meant to jump start a healthy lifestyle and weight loss....nothing wrong other than it includeds very little carbs, its boring as all get out and I am not cut out for vegetarianism whatsoever!!! I need meat soon!! 

I felt bad today (DAY 3 on the diet) because my body is getting over the whole "bread and pasta is so delicious" phase of this diet.  Its craving sugar/carbs and its used to having alot so I am detoxing alot of bad things!! 

Do I like this diet?...No, its the diet from hell but its working and its not like I am starving myself in any way, shape or form!! The whole point is to stuff yourself with healthy things for a week to get your body clean!!!  The soup is pretty good but gets old after a few bowls and fruits and veggies get boring too but I am already looking at other "unhealthy" foods differently.  As a lifelong "fatty", I need something to reboot my brain into eating good foods!

And believe me, if I thought I was hurting myself with this diet, I wouldn't be doing it...

Whines: I am so bored of fruits and veggies and really want cheese and meat and BREAD!!!  My only concern about this is that I will binge on all the junk Ive been missing this week...but from being around my family eating CFA and ice cream, I am actually kind of repulsed by it at the moment...Hopefully my meat days coming up at the end of the diet will break this...

Shines:  I will get through this week and hopefully have a new appreciation of food and not abuse it the way I was before!!!  I will though be having a piece of bread shortly after this is all over!!! LOL

Day 16, back on Track...5 lbs LOST!!!

Day 16
Weight: 181!!!!!!!!!!!!
Treadmill: 25 minutes, 1.1 miles, 120 calories

So I finally feel like I am back in the gym!  I am totally back on track and back on my BLOG!!!  So happy!

Yesterday, my hubby couldn't control himself and went ahead and gave me my Mother's Day gifts...Needless to say, I am one happy girl ;)
He got me a Kitchen Aid juicer (thank goodness because I can now make lemonade without killing myself) and a Kitchen Aid ice cream maker!!!I cant wait to use the ice cream maker!! I also got this little nifty thing!!


Its a watch that counts my calories burned, heart rate and time of course!! I'm sure it does more but I haven't learned that much yet!! This is the coolest thing ever....This pic was from yesterdays workout...today I burned a total of 444 calories, from my workout and then going shopping afterward at Walmart!  Sweet!

Day 11-15!!! I know I am HORRIBLE!!! Long catch up post!

I need to play catch up I guess...I feel awful that I am this far behind after doing so great!!

So in my defense, I was super busy last week finishing up my nephew Carter's birthday gift!!  Time consuming but SO worth the work!  Will be making them as gifts from now on for my kiddos in the family, so be on the lookout guys for more cuteness!

STOP, SLOW and GO have Velcro to match to the coordinating lights!!

CaRterpillar dumps dirt out and tucks back into a slot behind the truck...

Firetruck has a squeaky ball inside that squeaks, fire has crinkle wrap inside to make it sound like fire and windows open and close...

Train goes up and down the track...

Anyways, back to the catch up...

Day 11 (Wednesday, last week):
Weight: 183 lbs
BF: 55 minutes of pain
Treadmill: 20 minutes, 1 mile, 100 calories

Wednesday, I got a massage from Debbie...Awesome, but I still need to pay her for this, my memory is horrible if you haven't noticed...

Day 12-13 (Thursday-Friday, last week)
I didn't go to the gym on Thursday or Friday.  Thursday was spent doing laundry so I was a little active...right?
Friday was spent just sewing, sewing and more sewing, but I finished!

Day 14 (Monday, this week)
I stayed home again from the gym due to a stomach ache...I was sick all Sunday night.  Catherine and I both stayed home and were not feeling well for the most part of the day :(

Day 15 (Tuesday, this week)
Weight: 181 lbs...YES 5 lbs DOWN!!!
Treadmill: 20 minutes, 1 mile, 100 calories
Stationary Bike: 20 minutes, 2.5 miles, 97 calories

So that's a boring catch up to date...Will write a new post about today in a bit!

Day 10...Need to Focus!

Day 10:
Weight- 184 lbs :( Little discouraging right about now
Treadmill- 20 minutes, 1 mile, 90 calories
Eliptical- 5 minutes, 25 calories (I was not feeling it this morning)
Stationary bike- 15 minutes, 2 miles, 75 calories burned

Today I took my friend Erin to the gym with me...Hopefully she can start coming and we can work on these weight issues together! I managed to shomehow run on the treadmill, only for about a minute but it was a start, right?  I am getting a tad stressed out about Summer coming and all the things I need to stay on top of right now and I feel I am backsliding a bit.  I am still drinking WAY too much soda and have detoured off my diet the last few days.  I am not happy about it so as of 1:41 pm, May 1, 2012, I am NO longer a soda drinker!!!  Please someone, if you see me drinking one or think I am even tinking about one, remind me how awful they are for me and how much weight I will lose by STOPPING!!! 


My anniversary is July 31, I should be able to lose 25 lbs by then (a healthy rate of 2 lbs per week) so I can be a more active participant on our 5 year trip!!!  I have got to do this, there is no way I can go around the rest of my life being overweight, unhealthy and stubborn!!!

Tomorrow I am back to my BF class and am determined to see those lbs just fall OFF!!
