Weight: 181, so I have only been able to keep 5 lbs off but I am positive about that and think its awesome that I have been able to at least lose that!! Slow and steady wins the race right?!
Workouts: I have been steadily walking for 20 minutes on the treadmill, 1 mile a day (jogging for about a minute each time, a little more and little less depending how I feel)...One day I hope to be able to run the whole mile, soon grasshopper! Ive also been using the stationary bike or the elliptical, depending how hard I want to work that day...
So all in all, I have hit the gym for at least 3o minutes a day!! Much better than I was about a month ago, so no complaints just yet! Will be spicing things up over the summer since I will be gone alot so I need to find some good, small stretching and vacation workouts to do while we are on the road...again!
I have a plan, to make a grocery list that actually consists of meals that will ACTUALLY get cooked this week!!! So I will be spending some time on Pinterest looking for new recipes for you guys! Plan is to incorporate the basic ingredients in the meals so not much is needed on the list. If all goes well, I will be loading the info on the blog with recipes and pics for you! It seems that people are responding well to the recipes so I will definitely be trying more out for you and blogging about them!!!
I knew my workout updates would be boring, as they have become for me as well, so I plan on updating on my workouts just once a week and trying to blog more about what we eat! Hopefully this will keep us eating at home more since we have been eating out WAY TOO MUCH!!!! Its strange how when Manuel doesn't work, we eat out, which is pretty silly since we are not making any money! HELLO....Anyways, this week will be spent at home being the homemaker that I used to be (except tomorrow because Catherine graduates Kindergarten and we will be celebrating!).
Now onto recipe!!
Baked Wonton Ravioli
Ingredients:
Wonton wrappers or Egg roll wrappers
Pasta sauce
(I use Ragu, just because its cheap and they have an organic option that has just veggies and no preservatives)
Ground turkey
Onion, chopped
Bell pepper, chopped
Garlic, minced
Baby spinach, chopped
Mozzarella cheese, shredded
Parmesan cheese, shredded
Pam cooking spray
Preheat oven to 400 degrees, spray baking sheet with cooking spray. Brown turkey meat with onions and bell peppers. Drain fat, if any. Add pasta sauce and simmer for about 20 minutes. Lay wontons on a flat work surface and place 1 tsp pasta sauce mixture in top corner of the wonton/eggroll wrapper. (1tbsp for eggroll wrappers since they can hold more) Sprinkle with both cheeses and a small bunch of spinach (whatever is enough to make the wrappers still close!). With water, wet the outer edge of the wrappers and fold over to close. Lay on baking sheet and spray the wrappers with cooking spray, this will help them crisp up in the oven. Bake for about 20 minutes or until the desired crispness is achieved! Let cool for about 5 minutes and enjoy!!!
So good and still portable enough to eat on the go!! A whole meal in a wonton wrapper...AGAIN!
